Low-Carb Vegetables:

Spinach (boiled, strained, then juiced to remove soluble and insoluble fibers)
Zucchini (cooked, without skin)
Cucumbers (peeled)
Eggplant (boiled, moderate portions)
Bell peppers (moderate consumption)
Iceberg lettuce (boiled, strained, then juiced to remove soluble and insoluble fibers)

Fruits:
Avocado, in moderation, could be an option, but if even small amounts of fiber are an issue, it might be best to exclude fruits altogether.
